Apple Pudding Pie Muffins recipe

Apple Pudding Pie Muffins - makes about 30
3-4 apples, cored and shredded, skin on
2 cups flour
1/2 cup old fashioned oatmeal
1/2 t salt
1 T baking powder
1 1/2 t cinnamon
1/2 cup brown sugar
1/4 cup sugar
1 stick butter, softened
2 eggs
1 cup milk or sour cream
1 t vanilla



For electric oven: Preheat to 350.  For gas oven: preheat to 375.


Line muffin pan with liners (unless you have non-stick pans)


Mix together flour, oatmeal, salt, baking powder, cinnamon, brown sugar, sugar in a separate bowl.  Set aside.


With a mixer, mix until blended: apples, butter, eggs, milk, and vanilla.


Add dry ingredients by the cup-ful until all is incorporated.  Fill muffin cups about 2/3 full (about 2 Tablespoons.)  Bake for 18-20 minutes until brown around edges.  Cool.  Eat.  Enjoy.


Store in refrigerator for up to a week or freeze for three months.   If left on counter, must be eaten in 3 days.  Yum!
